Ingredients
  

  • – 1 lb large shrimp peeled and deveined
  • – 1 1/2 lbs baby potatoes halved
  • – 1/4 cup unsalted butter melted
  • – 2 tablespoons olive oil divided
  • – 5 cloves garlic minced
  • – 1 tablespoon chopped fresh parsley
  • – 1 teaspoon smoked paprika
  • – 1/2 teaspoon chili flakes optional
  • – 1 teaspoon sea salt
  • – 1/2 teaspoon black pepper
  • – Lemon wedges for serving

Equipment

  • Large sheet pan, mixing bowl, spatula

Method
 

  1. Preheat oven to 425°F (218°C). Line a sheet pan with parchment paper.
  2. Toss baby potatoes with 1 tablespoon olive oil, half the garlic, half the paprika, salt, and pepper. Roast for 15 minutes.
  3. Meanwhile, in a bowl, combine shrimp with melted butter, remaining olive oil, garlic, paprika, chili flakes, and parsley.
  4. Add shrimp to potatoes on sheet pan; toss gently. Continue roasting 8–10 minutes, until shrimp are opaque and potatoes golden.
  5. Serve hot, garnished with lemon wedges and more parsley.

Notes

Add favorite vegetables for extra color. Use plant-based butter for dairy-free. Great with rice or gluten-free bread.
